Work in groups to make Jollof Rice, a West African dish that uses rice, tomatoes, vegetables and sometimes proteins. The current version of this popular dish dates to the 19th century but has earlier versions based on the regional availability of ingredients. While the rice simmers, taste the varieties of rice and learn about their uses in dishes from around the world.
